I actually think this could be my favourite steak recipe. We’ve had it twice in one week as my first photograph was disappointing 🙄 so thought I’d better make it again. It’s really all about the marinade which doubles up as a dressing. You could use any cut of steak for this and it would still be delicious.

Method

  1. Mix the dressing ingredients together in a bowl. Pour a 1/3 of the dressing over the steaks, season and leave for 30 minutes.

  2. In a large pan heat up a little oil. When very hot add the steaks. Cook on each side for 2 minutes. Cradle with foil, turn off and remove from the heat. Leave the steak in the hot pan for 5 minutes. The residual heat should mean they are beautifully pink (fingers crossed) and rare.

  3. Slice the Pak Choi in half lengthways and pan fry in ground nut oil until just soft.

  4. Slice the steak and drizzle both the steak and Pak Choi with the rest of the dressing. Serve with noodles.
