Chicken Milanese & Shaved Fennel Salad

One of my absolute favourite things to eat is a Milanese. When I was younger my mum used to make it with a big pile of rich garlicky, tomato pasta. Today I have served it with a citrusy shaved fennel which is lovely!

Chicken Milanese & Shaved Fennel Salad

For the salad

Method

  1. Slice the chicken breast horizontally but not all the way through and open up. It should resemble a heart. Place in between 2 pieces of parchment paper and bash with a mallet or rolling pin until as thin as possible. Approximately 1.5 cm.

  2. Whisk the eggs and garlic together, then coat the chicken in the egg mixture. If you have time, leave it there for 10 minutes.

  3. Mix the breadcrumbs and Parmesan together, and then season the chicken generously. Coat the chicken in the breadcrumb mixture, making sure it’s completely covered.

  4. In a very large frying pan, heat 1 cm of oil. When hot and almost smoking, carefully place the chicken and cook until golden on one side. Don’t be tempted to turn it too early and keep it still so it creates a golden crust. Cook for roughly 3-4 minutes on each side and serve immediately.

Tips

Don’t over crowd the pan. It’s better to do it in batches. Use more oil than you think.
