
This meal was made in under 15 minutes. It was one of those “what am I going to have for lunch?” kind of meals that was really very tasty and worth sharing. The salmon would work well with Pak Choi, chard or kale etc. I served mine with rice, but noodles would work perfectly.

Miso Glazed Salmon with Spinach & Asparagus

Method
Mix the glaze together in a bowl and use 2/3 of it to coat the salmon. Season and roast for 7 minutes at 220 degrees.
Steam the asparagus and spinach for 2 minutes and drain.
Serve with jasmine rice and drizzle the vegetables and rice with the remaining glaze.
